Aliment
Prazul este o planta legumicola, cu tulpina cilindrica groasa si inalta, cu frunzele lanceolate si bulb carnos. Se consuma partea alba si putin din partea verde. Prazul crud se foloseste sub forma de salata. Se poate combina cu diferite ingrediente la prepararea unor mancaruri sau se poate umple.
Crud, taiat foarte subtire in salate, amestecat cu alte cruditati, prazul aduce o aroma si un gust deosebite si contribuie subtil la reusita fiecarei retete, fara a anihila aromele celorlalte legume: praz cu pulpa de vitel, peste la cuptor cu praz, sufleu de linte cu praz.
Alegeti prazul cu tulpini mai subtiri, fiindca cele groase (peste 3-4 cm) au o textura mai fibroasa. Puneti la uscat frunze de praz intr-un cuptor incins, ca sa aveti pentru ciorbe in timpul iernii. Prazul proaspat trebuie pastrat nespalat sau taiat in frigider, unde poate fi tinut 7-14 zile, invelit lejer intr-o punga de plastic. Il puteti pastra 2-3 luni si in congelator, dupa ce a fost oparit 2-3 minute in apa fierbinte, dar isi va pierde o parte din gust si textura.
Dietetoterapii
Unii nutritionisti recomanda in opricare dieta de slabire consumul frunzelor de praz. Ele contin si o substanta monozaharidica denumita “All-Ozem” ce actioneaza asupra insulinei, crescand efectul hipoglicemiant al aceteia. All-Ozem-ul din frunza de praz este si un puternic afrodisiac, netoxic care ajuta la stimularea sexuala
Sucul de praz este indicat in regimurile alimentare ale celor care sufera de astenie, hipertensiune arteriala, arteriosceroza, dispepsii, anemie, reumatism, afectiuni urinare, insuficienta renala si obezitate.
Dovezi stiintifice incontestabile arata ca substantele din frunzele de praz detin puterea de reexhilibrarea majoritatii functiilor biologice, in special prin antrenarea productieide biocatalizator (enzime si hormoni proteici, ca si de celule ale apararii imunitare impotriva bolilor infectioase). Prin stimularea metabolismului proteic se explica, mai modern, recomandarea prazului in astenii fizice si nervoase, dezechilibre nervoase, sclerozarea unor tesuturi, cum ar fi, spre exemplu, arteroscleroza sau scleroza in placi.
Tot in frunza de praz se intalnesc mici cantitati de siliciu, care poate fi absorbit cu mare usurinta dimineata. Siliciul s-a dovedit un important dusman al colesterolului, actionand atat asupra producerii sale, cat si a supra descompunerii acestuia, in colina si sterol.
Alte insusiri terapeutice:
- prazul impiedica inmultirea si raspandirea celulelor tumorale;
- reduce colesterolul total si colesterolul “rau” si creste colesterolul “bun”;
- consumul regulat reduce riscul de prostata si colon;
- impiedica absorbitia zaharului din intestin si ajuta la metabolizarea sa in organism;
- alimentatia bogata in praz previne cancerul ovarian.

- antiseptic – partea alba taiata si pisata se foloseste in vindecarea bataturilor, iar frunza aplicata pe plagi are efect cicatrizant...
