Easy Raw Broccoli Soup
This is a simple and quick recipe that has become a staple in our family. We eat this soup raw, however you could gently warm it up in a high speed blender if that is your preference. Lightly cooked broccoli frees up beta-carotene for better absorption and boosts its overall antioxidant activity, while phytochemicals in raw broccoli have significant anticancer properties that are lost and or greatly diminished once cooked.
